is there any way you can seperate these two devices? as in have the water bottle next to a car wreck or pile of rubbish and have the pressure plate on the road or do they both have to be buried together.

in r/l, as long as you had a long enough wire to do that ye but your better off putting it right under the pressure plate in most cases tbh, unless its a really large one.

ingame, no it has to be one unit.

so whats the purpose of the pressure plate in the screenshots above? do you have to place the bottle first and then the plate?

Looks alright, but isn't it easier to spot if you use low grafics?

The rock stacks are actually a pretty awesome feature, you can spam them around certain areas or choke points to force the enemy to pay more attention, slow down, and be ready to be ambushed!
They can also be used as vehicle dismount baits, for snipers.
Spamming them in certain locations can lead the enemy to false assumptions like a none existent cache proximity!
LOVE IT!

EDIT: This leads me to the following 2 questions:
Can they be placed in indefinite numbers?
Can all insurgent roles stack rocks? or just particular kits like sappers?

1: yes, a sapper can put down up to 10 stacks.
2: No, only the sapper is trained in the art of stacking rocks :p
